Methodology
What is measured?
The index tracks the ingredient cost of one Adjaruli khachapuri: 300 g cheese, 250 g flour, 40 g butter, 125 ml milk, 1 egg, yeast, sugar plus the energy for baking. Quantities stay fixed — only prices change. It works like a basket index, analogous to ISET's well-known Khachapuri Index (Imeretian variant).
Where do the prices come from?
Food prices are collected daily directly from Georgia as median values across 13 nationwide supermarket chains. Energy costs are based on the official household tariffs of the Georgian electricity and gas providers, each including VAT. Values are typically updated daily.
The index is for information and entertainment; it is not an official statistic. Restaurant prices are considerably higher due to rent, staff and margin.
The Adjaruli — and how to eat it properly
Adjaruli khachapuri comes from Adjara, the Black Sea region around Batumi. Its shape tells of the coast: the bread is a boat, the molten cheese the sea, the egg yolk the setting sun. It is served piping hot — and then every second counts.

Stir first
While the cheese is still bubbling, the egg yolk and butter are vigorously stirred into the hot cheese with a fork. The residual heat cooks the egg, creating a creamy, silky cheese-egg mixture — the heart of the Adjaruli.
Then tear and dip
It is eaten by hand: tear pieces off the crusty rim — traditionally starting with the two pointed “bow ends” of the boat — and dip them into the cheese-egg cream. Cutlery is only needed for stirring.
Tip: In Georgia it is usually paired with a glass of white wine or a cold lager — and ordered as a meal of its own, not as a side. The XL version with two eggs easily replaces both lunch and dinner.
What khachapuri means to Georgia
Khachapuri — literally “curd bread” (khacho = curd, puri = bread) — is far more than a dish: it is Georgia's culinary national symbol. Since 2019 the tradition of making it has been officially recognised as part of the country's intangible cultural heritage. Hardly any supra, the traditional Georgian feast table, is complete without it, and almost every family swears by its own recipe.
Every region has its own signature: the Imeruli from Imereti is the simple, round everyday version filled with cheese. The Megruli from Samegrelo adds extra cheese on top of the crust. And the Adjaruli from the Black Sea coast is the open, opulent boat variant with egg and butter — once the hearty meal of Batumi's dockworkers and fishermen.
